German Chocolate Cake Cookies

Over the last month, #12daysofcookies turned my kitchen into a cookie making factory. I make cookies three times a week, which roughly calculates to two large bags of all-purpose flour, five boxes of butter, 48 eggs, a pound of sugar, four bags of chocolate chips, three ruined cookie batches and many hours recipe testing. I’ve baked so many cookies this month that about a week ago, my cookie creativity started running out — that was, until I ran across these beautiful German Chocolate Cake Cookies.

What I like about these cookies is that they bring the “wow factor” with very little prep and effort. Better yet, they successfully capture the flavors found in the classic German chocolate cake.

Can you believe that Christmas is just over a week away? I don’t know about you all, but my year seems to have flown by in the blink of an eye, and this month even faster than that. All I know is that I hope the next week slows down just enough so I can enjoy my time off work and finish all my Christmas shopping!

Day 8: Apple Pie Cookies

Welcome to day eight of #12daysofcookies. Though these can technically be considered hand pies, I think they are small enough to count in this month’s cookie fun. And, if you like apple pie, you will love these cookies. I’ve made these once or twice over the years, and they are incredibly fast and simple to make. All you need pie crust dough and apple pie filling.

Lemon Cheesecake Cookies

Happy hump day everyone! This week has been super busy with work, a little KBBQ  and a last-minute session of karaoke, so I haven’t had a chance until today to get around to writing up this post. But even though the holidays are in full swing, I knew I had to make time to share this cookie recipe with you! It’s one of my favorites and can be summed up in only a few words: lemon and cheesecake.

Day 7: Lemon Cheesecake Cookies

I first came across this across this recipe while perusing Pinterest and was really intrigued by the combination of the rich cream cheese and the tangy lemon. Surprising enough, once baked, you can’t really taste the cream cheese. Instead, it helps create some of the softest cookies I’ve ever tasted.

Mini Mint Chocolate Madeleines

Earlier this week, I organized a white elephant gift exchange for my work. It turned out to be a great success. A couple bottles of champagne and 30 participants later, I ended up with an adult coloring book. And though I’m super excited to color in my gift, I’m glad that we got to take an hour out of our days to unwind during this busy work season. And obviously, what’s a holiday event without a little cookie action?

When I first moved into my apartment, my mom gave me a ton of new baking supplies, one of which was a pan for mini madeleines. I’ve never made madeleines before, but I thought how hard could these cake-like cookies be?

I was a little nervous when I first decided to make these macarons. The last time I made macarons was a couple years ago during a cooking class – meaning I was under the careful supervision of a teacher. So when my co-worker requested these cookies for her birthday almost two years after the originally made them in class, I revisited the recipe with a little trepidation.

Day 5: Hot Cocoa Macarons

The macaron is not a cookie that you can take shortcuts with – believe me, I tried (if their is a shortcut in the kitchen, I’m all for it). So, if your recipe says to  sift the flour mixture three times, it’s probably for a good reason. If you are supposed to use eggs at room temperature, you shouldn’t use eggs straight out of the fridge. You get the idea; don’t mess with the technique.
